- 1/2 c died yellow onion
- 1 c sliced carrot
- 1 zucchini, chopped
- 5 c low sodium chicken broth
- 2 1/2 c cheese filled tortellini
- 2 tsp olive oil
- In a large pot, sauté onion in olive oil for 3-4 min. Add carrot and zucchini and cook for 3 min. Add chicken broth and tortellini. Bring to a boil and cool until noodles are soft. Makes 4 servings.
